I have found a new love – sweet potatoes! Where have they been all my life? Whenever I went to the onion and potato section of the grocery store I would just pass right over them due to their wonky shape and weird dents.
Who wants a to eat a vegetable that looks old leather shoe?
I finally gave them a go when I found myself unable to eat most foods. These were on the list and it was time for a change.
So I invented ‘Competitor Crisps‘ with them! This is my version of Figure Competitor friendly potato chips…and they are delicious!
Competitor Crisps
First gather all your ingredients.
- Sweet potatoes
- Garlic
- Parmesan seasoning
- Mrs. Dash Chipotle seasoning
- Fresh ground pepper
- Fresh ground salt
Select a wonky looking potato and start peeling!
Then get your slice on. I don’t have any fancy slicing contraptions at my house, but I am getting pretty skilled at slicing them as thin as you can with a knife.
Line a baking sheet with parchment paper, spread out the sliced sweet potato, and season.
I season a lot, and I mean A LOT. It may be over the top, but then so is my name.

Possibly a tad much, but I love TASTING my food and it makes the whole house smell fabulous for the rest of the evening.
Pop it into the over at 400 degrees and bake the absolute heck out of them. Stir every 15 or so minutes so that they bake evenly. I leave them in the oven until the fire alarm is just about to go off.

I may try a sweet version of these with agave and cinnamon tomorrow. All I know is that I am glad I finally gave this wonky vegetable a second chance!

Try using clove and cinnamon. So yummy.
I also like to make a dipping sauce with greek yogurt, lemon and dill. /drool

I have found a few ‘salt-less’ spices at Costco, but I also will just dump random spices on things some nights. I dig through the cupboard and grab 3 or 4 that seem like they will go well together and give them a try. Sometimes its fabulous and other times…well…its one of those ‘learning experiences’.

Oh my gosh, I totally laughed my butt off at the gym reading this, you are too funny! I love your use of the word wonky, makes me giggle every time. And the picture of you holding the sweet potato, priceless =) I do love sweet potatoes too. My favorite way to do them is chunking them up, drizzling with olive oil, salt, pepper and roasting them til they are crisp on the outside and soft on the inside! I’m so trying these!!
