Every single morning I eat the same thing. And I love it. If it were a menu item in a restaurant, I would name it the Fierce Figure Competitor’s Hearty Scramble.
As you know or probably have surmised, I count every single calorie, carb, protein, and fat that I eat every single day. So it’s important to have tasty, easy to make meals that fit my high maintenance criteria.
So let’s get cracking!
Fierce Figure Competitor’s Hearty Scramble
- 40 grams onion chopped up (1 slice of a medium sized onion)
- 40 grams ham (about 1/8 cup)
- 70 grams mushrooms sliced (a big handful)
- 4 egg whites (I use the already prepared ones)
- 2 pieces whole grain toast
- 1 tsp light butter
First, gather up all of your ingredients.
Then start chopping. There really isn’t much to do, which is good because I’m usually doing this at 5:30 am, BEFORE I have coffee!
Saute over medium low heat without any butter or oil. Keep a lid on your pan to keep the moisture in. I have a fantastic non-stick pan that requires no fat to fry things. If you don’t have a super non-stick pan, splash a bit of chicken stock in to keep things from burning.
Saute just until your onions start to look clear. Add your 4 egg whites and scramble away! But don’t forget about your toast – make sure to pop it into the toaster right before you start scrambling so everything is hot and ready at the same time.
Put 1/2 teaspoon of light butter on each piece of hot toast and enjoy! And yes, I actually use a 1/2 teaspoon every morning to ensure each piece gets the correct amount!

At this point in the morning, I am the happiest woman on the planet. I get to EAT. Have I mentioned that I LOVE to eat?!
I realize it is a bit anemic looking, but I’m anemic and you like me. So I say give it a try! If you want more color, add in some red peppers or tomatoes.
Protein – 28 grams, Carbs – 32 grams, Fat – 5.5 grams, Calories – 289.5
