Here’s another one of my Donloree recipes! It’s become one of my standard lunch fares as I count down the last 7 weeks of my training.
I heart quinoa. It’s pronounced keen-wah, not quin-no-uh…and if you ask for quin-no-uh at the grocery store, all you will get is a weird look from the person stocking shelves.
Ingredients:
- 100 grams chicken, cubed and already cooked
- 22 grams or 1/8 cup uncooked quinoa
- 70 grams chopped carrots (1 large carrot)
- 70 grams mushrooms (big, old handful)
- 50 grams chopped onion (1 thin slice of a large onion)
- 1.5 cups chicken broth
- Pepper to taste
Put all the ingredients in the pot, cover with chicken stock
Bring to a boil.
Turn to low and simmer for 30 minutes.
Let cool for a few moments.
