I eat weird, but oh so tasty, things.

Last week I went out for coffee with some of my friends from the gym. Our friendship has formed out of seeing each other every morning at the crack of dawn when most of the world is still sleeping.

Any woman who is happy to hit the iron at 6:00 am and puts in an epic sweat session day in and day out before getting to work is my kind of person.

Birds of a feather flock or something.

When super crazy things happen at the gym, a skinny man gives me the gears about something ridiculous, or I am trapped in the power rack by a crazy dude doing pull ups I know I am not alone. We work hard, and rarely complain.

Commiserate, not complain.

During our *ahem* commiseration session over black coffee, the topic of the question came up.

So do you still eat all that healthy stuff? Are you still on that crazy diet where you can’t eat anything? I don’t know how you can live without eating all this stuff. Seriously. Are you still doing that crazy stuff?

Now no matter how much I hate this question, it is a fair question when it comes to me.

I eat weird stuff.

My meals are all healthy and tasty, at least in my opinion, but are a tad strange on the best of days. I probably eat stranger than most people on the healthy food bandwagon. Add in gluten free, no sugar, and no dairy to the mix, and well, it just gets weird if I eat anything besides meat and potatoes.

Let’s be honest, I was built for the farm and meant to live on meat and potatoes. At least that is what I tell myself when I haul everything up from my car in one trip while wearing a suit and heels.

A Costco trip, 12 books from the library, the lunch bag of empty containers, gym bag, and purse shoved full of things I have forgotten existed. Totally ridiculous.

My newest food obsession is the strangest one yet. Heck, even I think it is weird.

Tasty, but weird.

Sweet and Salty Peanut Butter Blueberries

Yup, I came up with the name and the recipe. Doesn’t it sound delicious?

Ok, probably not, but nonetheless I love it.

Ingredients

  • 1 scoop vanilla protein
  • 1 tbsp of natural peanut butter (unsalted)
  • Giant sploosh of coconut water
  • Salt, lots of it
  • 1 cup frozen wild blueberries

A strange group of ingredients!

Put the protein, peanut butter, and salt (I use 4-5 heavy handed twists on my grinder…I know, it is a lot of salt) in a bowl. Sploosh in your coconut water and stir and keep adding splooshes of coconut water until you have a pudding texture. Dump in the cup of frozen blueberries and mix up until it is a purple mess.

Doesn’t look tasty at all…but it is…at least to me!

The frozen berries turn it into a soft serve, salty, and sweet treat.

Strawberries and raspberries are great in the mix too.

  • Great for breakfast, lunch, dinner, or all three!

I am not counting macros these days, but my guess on macros would be pro 30, carbs 15, fat 9.

No wonder I hate it when people ask me about what I eat, it is very weird.

    • Oh PB2 how your cross border shipping makes my wallet sink. I think there is a shop in the city that sells PB2, I should go purchase some again. So tasty in these kinds of things. Let me know what you think…it is totally a strange recipe. 🙂

    • Oddly enough, I used to hate blueberries! Seriously hate them. For some reason I gave this a try with some blueberries I had in the fridge for making my husband’s muffins and *YUM*!

  4. I think that sounds good….but I also eat weird things too. My fav combo these days is broccoli, pulled chicken, sweet potato, carrot and mustard. Sooo good!
