Trick AND Treat

Bowls of small Snickers, Mars Bars, packages of M&M’s, and every other kind of candy on the planet are sitting out EVERYWHERE I go.

Even the gym.

Yes.  The YMCA even had a Trick or Treat bowl of goodies out this morning. AND they had a bake sale going. Does anyone else see the irony is this?

Cute, Small Child – “Miss, would you like to buy a brownie?” Her huge dimples and hopeful eyes bore into my soul.

DLH – “Ummm…” Actually, YES, I would LOVE a brownie, but I am not going to have one…what to tell this small soul?

CSC – “All the proceeds go to help children suffering from diabetes.” More irony…

DLH – “Ummm…”

CSC – “Please…”  Eyelashes batting

DLH – “No. I can’t. I CAN’T! I am training for a Figure Competition and I have no idea how many carbs, fat, or protein are in the brownies so I just can’t. I want to help the diabetic children of the world, I really do; unfortunately eating sugar and blowing my diet really isn’t going to help. Best of luck!

Then I walked away as fast as womanly possible. Say NO to the brownies from the small, cute, guilt inducing child!!

Who thought it was a good idea to emotionally guilt people into cheating on their clean eating plan right after they work out? Luckily I was smart enough to bring an after work out meal with me so I didn’t fall prey to their tactics.

Halloween is a Figure Competitor’s nightmare. Itty, bitty candy bars are lying around all over the place and they are so small that they seem harmless. I know that there is never ‘just one’ in my life, so I have completely avoided the small muffin top inducing bars with a vengenance.

Treats for me are things like a cup of raspberries, 1 square of dark chocolate, not having to weight and measure my food…

Not weighing and measuring my food? Now that is a TREAT. In order to do that, I have to be a wee bit tricky.

One of my favorite tricks is to make up food in advance and then eat on the run. A favorite treat of mine are mini-quiches!

First gather up all of your supplies.

Looking good already!! Who doesn't like cheese and eggs together?

1.5 cups egg whites

1/4 cup half and half (10% milk fat)

60 grams ham diced

25 grams green onions chopped

70 mushrooms chopped

75 grams peppers diced

30 g swiss cheese grated

salt and pepper to taste

Mix it all up in a bowl.

Can you tell that I LOVE pepper? Salt, not so much!

Then fill up muffin tins with the mixture. I like to use the silicon holders because the paper tends to stick and annoys the heck out of me to try to peel it off when I’m starving!

10 year old muffin pans aren't the prettiest thing. If they had known they were going to be in a photo shoot today I am sure they would have undergone an SOS pad treatment!

Cook at 350 degrees for 20 minutes, or until a knife comes out clean.  Let them sit for a few minutes before eating at they will continue to cook once out of the oven.

The smell is amazing! Mmmmm!!

A few of these make a fabulous breakfast on the run or post workout snack.  Or you can bake it all in a dish like a larger quiche and consume as much or as little as you want at once!  Keep the extras in the fridge and eat them whenever you want to!

    Thanks for the recipe, Donloree. Since I’m on the learning curve with eating clean – I could use tried and true recipes (especially those that make more than one meal so I can have extras when I’m in a pinch. Had a good laugh about the brownie scenario. Relate well to the Halloween candy “epidemic”. With two kids who are trick-or-treaters and neighbors who are WAY too generous we could open our own candy store. I have been convincing myself that I’m NOT going to get in to the loot they collected tonight. It’s just not worth it! 🙂

  4. Okay, made these last night. SO good! My husband loved them too but said the only problem is he could eat 64 in one sitting. I agreed =) I just bagged them up with two in a bag and bring them to work, then there’s no portion control issue. Thank you so much!!

    • I am so glad you like them! Two of them is a perfect snack. 🙂 My husband loves them too. I have never froze them…wonder if they would make it through the defrost process…hmm….
